Hello buddies. How are you all doing? I know It’s been a while since I posted a new recipe. Varun was off to Sydney for a couple of days and you know how tiring it can get, handling a 9 month old bub alone. So to entertain the little monster, I took him to the nearby mall and yes bought a piece of clothing for myself – Great use of time I must say 🙂 Isn’t it fun to shop all by yourself without the constant nagging from the husband. I love it !

So now talking of food, I made one of my favourites for dinner last night – Veg Fried Rice served with Chili Mushroom Gravy. One of the scrumptious dishes which always leaves you craving for more. I normally make it extra to have the leftover for lunch the next day.

Posting my step by step recipe (with pictures) here:

Serves – 2 people

Ingredients:

For cooking rice separately

  • 1 cup rinsed basmati rice (200 ml)
  • 1 tbs oil
  • ½ tbs salt or as required
  • 2-3 cups water

Other Ingredients 

  • 3 tbs oil
  • 4 garlic cloves (finely chopped)
  • 4 tbs soya sauce
  • 2 tbs vinegar
  • 1 tsp black pepper
  • 1-2 chopped green chilli

Veggies for fried rice (quantity can be used as per preference)

  • chopped carrot
  • peas
  • baby corn
  • chopped beans
  • chopped capsicum
  • chopped onion

Instructions:

Take rice in a cooking pan and add water to it. Add 1 tbs oil and ½ tbp salt. Cook the rice till al dente. Make sure not to make the rice mushy. Addition of oil makes each grain stand out.

Drain the rice and cool it. It’s important to cool the rice before mixing it with the veggies. Rice grains tend to break if still hot while mixing.

Chop the veggies while the rice is cooling off. The beans should be chopped very fine since it takes longer time to cook. I cooked the beans in microwave for 5 minutes before chopping.

Now heat 3 tbs oil in a wok and saute garlic for 1-2 minutes. Add chopped onions and saute for another 2-3 minutes.

Now add all the chopped vegetables and stir fry for 4-5 minutes. The vegetables should be cooked and crunchy.

Add soy sauce, vinegar, black pepper, salt and chopped green chillies. Since soy sauce already has salt in it, take care not to add too much salt. Stir the sauces well and add cooled rice.

Mix the rice well with the veggies and fry to 2-3 minutes. Add more sauce or salt if required and stir well.

Veg fried rice is ready to be served with Chili mushroom gravy.
