What do you do when you have left over rice and are not in a mood to cook? Well you stir fry vegetables and make Vegetable Fried Rice and uhm..minus the soya sauce and vinegar. I mean we do love Indo Chinese style Fried Rice but change is often good. Isn’t it?

So this fried rice recipe is quite simple. All you need to do is chop vegetables of your choice, fry them and mix with the left over cooked rice lying in your refrigerator. Tadaa and you get mouth watering food waiting for you gulp it down.

I personally prefer adding spinach to the dish since the flavour and colour of spinach makes the rice even more flavourful and tempting to look at. Looks good in the photo too haha 🙂 Spinach and Rice go really well hand in hand. If you wanna know know how and why try out Spinach Pilaf and you will get your answers.
