What do you do when you have left over rice and are not in a mood to cook? Well you stir fry vegetables and make Vegetable Fried Rice and uhm..minus the soya sauce and vinegar. I mean we do love Indo Chinese style Fried Rice but change is often good. Isn’t it?
So this fried rice recipe is quite simple. All you need to do is chop vegetables of your choice, fry them and mix with the left over cooked rice lying in your refrigerator. Tadaa and you get mouth watering food waiting for you gulp it down.
I personally prefer adding spinach to the dish since the flavour and colour of spinach makes the rice even more flavourful and tempting to look at. Ok. Enough of my talking. Let’s have a look at the Vegetable Fried Rice – Indian Style recipe.
Serves – 2 people
1 cup = 240 ml
- 2 cups Cooked Rice
- ½ Onion medium sized (chopped)
- 1 Tomato medium sized (chopped)
- 3 Garlic Cloves (chopped)
- 1 Carrot (chopped into squares)
- 1 Cup spinach (finely chopped)
- 1 Cup peas
- 1 Green chilly (finely chopped)
- 3 Tbs oil
- 1/2 Tsp cumin seeds
- Salt to taste
- 1 Tsp Garam masala
- ¼ Black pepper (optional)
Cooking instructions – How to prepare North Indian Vegetable Fried Rice
Heat oil in a wok and add cumin seeds. Let the seeds flutter and then add chopped garlic.
Saute the garlic for about one minute and then add chopped onions and chopped green chilly.
Stir fry the onions for about 3 minutes on low-medium flame and then add chopped tomatoes.
Fry the onion-tomato mixture for about 2-3 minutes. (we do not have to mash the tomatoes) Now add spinach, peas and carrot.
Add Garam masala, black pepper and salt to taste. Stir fry the vegetables and cook them by closing the lid on low-medium flame for about 5-10 minutes.
Now once the vegetables are cooked add cooked rice and mix well.
Your North Indian Vegetable Fried rice is ready to be served.
Serve this delectable Vegetable fried rice as a stand alone dish or with a curry of your choice.
