Chilli Garlic noodles is a famous Indo-Chinese Dish which is much loved in India. People in all zones savour it equally. Indo-Chinese cuisine is said to have developed by a small Chinese community which has been living in Kolkata for over a century. The strong flavour of garlic and chilli makes it an apt recipe for parties and get-together. One can add green chillies for extra spicy flavour.
Try this simple and easy recipe which is prepared in less than 30 minutes. Chilli Garlic noodles can be served as a stand-alone dish or served with Chilli Mushroom Gravy.
Serves – 4 people
1 cup = 240 ml
- 2 Pack of Noodles (150 gms each)
- 6 Cups of water (for cooking noodles)
- 1 Medium size onion (finely chopped)
- 4-5 Garlic cloves (finely chopped or made into a paste)
- 1 Medium size carrot/ 1 Cup (finely chopped)
- Half capsicum / 1 Cup (cut into thin strips)
- ½ Cup Beans (finely chopped)
- 4-5 Red chillies
- 4 tbs Vegetable Oil
- 1 tsp sugar
- 3 tbs Vinegar
- 3 tbs Soy Sauce
- ½ tsp Black Pepper
- ½ tsp Red Chilli Flakes
Cooking instructions – How to prepare Chilli Garlic Noodles
Heat water in a pan. Once the water starts boiling add the noodles. Cook the noodles till al dente. I cooked for appx. 5 minutes.
Please refer to the instructions in the noodle pack for cooking. Overcooking them will turn them soggy and sticky.
Drain the water from the noodles and rinse them well under running water. Set aside and toss them with a tbs of oil. Coating the noodles with oil separates them and prevents them from sticking to each other.
Now heat the remaining 3 tbs of vegetable oil in a pan and add garlic paste and chopped red chillies. Saute the mixture for a minute.
Now add chopped onions and saute them for another minute. Keep stirring preventing the onions from turning brown.
Now add chopped beans and carrots and cook them for 3-4 minutes by covering the lid.
Once the carrot and beans are cooked add capsicum and saute for 2 minutes.
Now add 1 tsp sugar to the veggie mixture.
Add vinegar and Soy sauce. Stir for a minute or two.
Then add cooked noodles.
Stir the noodles into the veggie mixture and sprinkle some black pepper and red chilly flakes.
Noodles are ready to be savoured.
Serve hot with Tomato ketchup.
